I look forward to Friendsgiving every year and can't wait for all of the "framily" meals coming up this season! It's always nice to experience a Thanksgiving meal without anyone asking you why you're single or if you ever want to have kids or whatever! ;)
Last week, I got together with a few gal pals and had the cutest backyard Friendsgiving! We wanted to make things simple, but still cute, so we focused on finger foods and small bite adaptations of traditional dishes! Instead of everyone bringing a dish, our friend Brooke cooked almost everything and we all Venmo'd her! She loves to cook, so that definitely worked out in our favor!
I made some mini pumpkin pies that were so simple, but my first batch got a little crispy on the edges, so I decided to rebake them and try a different crust formation. I wanted to use a cute leaf dough cut out on top, but I didn't have the right cookie cutter, so lattice pattern had to do! These bake in a muffin pan and were so easy and such a crowd pleaser, so I wanted to share them with you.
Of course I used store bought pre-made pie crust, because who has time to make homemade crust unless you're cooking with your mom and grandma for like 7 hours on Thanksgiving! ;)
Even my second batch came out a little uneven, but I still think they are so cute, and again, they all got eaten, so I think that's proof that they were a hit!
